First off, reclaiming your original horse, Pebbles, is entirely possible. Head south to Semine and locate the horse trader NPC. Be prepared, though; the trader won't hand over Pebbles without some negotiation. You'll need to either pay him in Groschen or attempt to persuade or intimidate him into relinquishing your horse.
In my journey, I followed the main questline and allied with Radovan the blacksmith, which led me to Semine. Dressing Henry in noble attire helped me convincingly persuade the trader to release Pebbles without payment, albeit at a slight cost to my reputation in the area.
If persuasion doesn't work, be ready to part with some Groschen to reunite with Pebbles.

A strategic spot to target is the farmhouse by Vidlak Pond in the west, owned by fishermen. Here, you can mount one of their two horses and ride away.
Once you've secured your stolen horse, make your way to the Nomads' Camp, just east of Vidlak Pond. Here, you can find a horse trainer NPC who will teach you how to saddle and tame your new mount. Remember, the trainer's services come at a cost.
Alternatively, you could bypass the trainer and ride your horse freely, though this might limit your control over the animal.
